About

The word ‘teff’ originates from the Amharic word ‘teffa’ which means ‘lost’ due to the small size of the grain or from the Arabic word ‘tahf’ used by the Semites in South Arabia.

Teff grows naturally in three different colours – Brown, Ivory, and White Tegg Grains. The White Teff flour is, therefore, wholegrain white teff.

 The source its conventional and organic teff from places where EU strict agricultural rules apply to the extent of fertilizer used farming conventional teff.

Ingredients

350g Teff Flour (we recommend Tobia Teff https://tobiateff.co.uk/product-category/pure-teff-flour/ gluten and sugar-free, organic)

 10-15g Binding Agent (amaranth, tapioca, or xanthan –gum)

 100-125g butter (kept at room temperature)

 10g dry gluten-free yeast

 ½ cup of lukewarm water to dilute the yeast.

Preparation

For Boiling:

10g baking soda

250ml boiling water

  1. Mix the yeast with lukewarm water and let it rise at room temperature.
  2. Put all the remaining ingredients in a big bowl and add the set yeast and add the butter.
  3. Knead the dough till you have even texture (if the dough sticking to your hand, spread teff flour or rub your hand with a very small amount of butter).
  4. Once kneaded well, cover with a tea cloth and let it stand for 1 hour away from drafts and cold air.
  5. Divide the dough into five balls of about 100g each, shape into balls and place them into the bagel molds. Leave them to stand for another 30mins.
  6. In the meantime, boil the 250ml water and put the baking soda.
  7. Once the water boiled, submerge the bagel molds for 8-10 seconds (counting) and immediately place the bagel molds on a baking tray (You can sprinkle linseed, teff flakes, or amaranth at this stage).
  8. Bake the bagels in the molds for 20 mins 200 degrees fan oven.
  9. Remove from the oven and allow to cool.
